2021 Cavatina Chardonnay
Haling from the Sta. Rita Hills, this wine is bright and crisp, with an amazing mineralité and gobs of fruit. As Chef Emeril Lagasse likes to say “Let’s kick it up a notch...BAM!” That’s how we feel about our new Cavatina Chardonnay. But it's the balance of this wine that sets it apart from other chards. Fermented in a combination of stainless steel and neutral French oak. The stainless steel brings out vibrant mineral tones and a bright crispness. The neutral oak brings out the fruit; aromas of Fuji and Gala apples, a little Bosc pear, and a hint of vanilla from the barrel fermentation. This all translates into gorgeous flavors in the mouth.
